When I came to the Food Network, I didn’t want to do a cooking show. I told Kathleen Finch for nine months I didn’t want to do a cooking show, I wanted to do a home-and-garden show.

‘The Food Network’ was just starting in New York, and I was getting lots of attention from Mesa Grill. They had no money, so if you couldn’t get there by subway, you couldn’t be on. It wasn’t like TV was something I really wanted to do – but I knew it would be great publicity for my restaurants.

People come up to me all the time and say, ‘Oh, I love to watch Food Network,’ and I ask them what they cook, and they say, ‘I don’t really cook.’ They’re afraid, they’re intimidated, they know all about food from eating out and watching TV, but they don’t know where to start in their own kitchen.

Nobody believed the ‘Food Network’ could last. Even I was short sighted and thought to myself, 24 hours of food on TV? They’ll run out of things to talk about in four days! But that wasn’t true. ‘Food Network’ continues to get better and evolve.

I’ve put my whole heart into cooking dishes that I am passionate about on ‘Girl Meets Farm’, and this has been met with such great support from the whole team and the Food Network and now our viewers.

My Food Network shows, ‘Emeril Live’ and ‘Essence of Emeril,’ are not in production right now, but I wouldn’t say that I’m necessarily leaving Food Network. I have a lot of television still in me. I enjoy teaching people, so it’s just a matter of time before I do something new.

Instead of cartoons, I was the kid who was watching Food Network, falling asleep to Emeril and Rachael Ray.

I started cooking seven years ago for real, and I started with pasta, and lasagna and roast chicken. Very normal American dishes. When I turned on Food Network, or any sort of cooking channel, that’s what people were making. So that’s where your education comes from.

I’m a big foodie and I love the Food Network. I watch it alarmingly too much.

Cooking, to me, it’s kind of therapeutic. It’s completely different from music as well. I’m not amazing at it, but I can cook myself a good meal. And I’m not just saying this, but anytime I’m on the bus or at home, I’m watching Food Network or cooking on TV just ’cause it’s interesting to me.

First and foremost I am a chef, whether behind the stove at one of my Northern California restaurants or for the past 15 years in front of the camera on my Food Network cooking shows. The Food Network and the Cooking Channel have so many viewers. And, because there’s no violence, some of that audience is children. So, I think we have a responsibility to educate parents how to produce healthy meals for their families.

I remember the Food Network when it was first starting out: Emeril Lagasse and all those people who helped make it when it was on a shoestring budget. It actually encouraged me to start cooking.

‘Down Home with the Neelys’ was the highest-rated Food Network show in history. But the crazy part about it was I never wanted to do that show. I never wanted to live my life quite out loud like that.

I watch Letterman. Once in a while, on the odd night, I’ll catch the Food Network and watch ‘Ace of Cakes,’ which I’m kind of obsessed with.

All I watch is the Food Network. I took a cheesemaking class a few weeks ago, and I told my family and friends to only get me kitchen stuff on my birthday. I’m into every kind of cookbook and anything by Anthony Bourdain. I’d love to own a restaurant if I could find the right chef.

When I do a 30-minute meal, for instance, on Food Network, that’s my food you see at the end of the show and it’s not perfect. And if sometimes things break or drop or the pasta hits the wall when I’m draining it, they never stop tape. They just kind of let me go with it.
